WINEMAKING NOTES

Meticulous care defines the winemaking process. Grapes are hand-sorted and destemmed before being gently protected with dry ice to retain purity. High natural acidity, combined with very low temperatures, allows for an overnight settling of the juice. The clean juice is divided into four fermentation lots, including a small barrel-fermented portion, with lees stirring employed across all batches to enhance palate depth and texture.

VINEYARD NOTES

Sourced from vines classified under the Cape Town Wine of Origin, the fruit is harvested from two distinct sections within the same vineyard block. This dual selection captures grapes at different ripeness levels, preserving freshness while adding a rare fullness not commonly found in Sauvignon Blanc. Careful handpicking ensures only the best fruit is used.

Bright and versatile, this Sauvignon Blanc shines alongside seafood. Its crisp acidity and expressive fruit pair beautifully with sushi, especially salmon, and complement a wide variety of shellfish and delicately prepared fish dishes.

AGEING POTENTIAL
