Tasting Notes
The Dorsland Cap Classique is an elegant blend of Pinot Noir and Chardonnay, crafted in the traditional method and matured for two years on the lees. Delicate and pale salmon-pink in colour with a fine, persistent mousse, it opens with aromas of wild strawberries, raspberries and red cherries, complemented by hints of rose petals, citrus zest and freshly baked brioche. Extended lees ageing adds layers of creamy texture and subtle notes of toasted almonds, while the palate remains vibrant and refreshing with crisp acidity, refined minerality and a long, dry finish.

Food Pairing
A beautifully versatile sparkling wine, ideal as an aperitif or served with smoked salmon, tuna carpaccio, sushi and fresh shellfish. Its bright acidity and delicate red berry character also pair wonderfully with duck, charcuterie, goat’s cheese salads, grilled prawns and Mediterranean-inspired dishes. For dessert, enjoy it with fresh berries, macarons or a light strawberry tart.
